CHICKEN FRITTERS

Ingredients:

1 ½  lbs      chicken breast 
2 large        eggs
1/3 cup       mayonnaise
1/3 cup       flour or cornstarch
1-1/3 cup    shredded mozzarella cheese
1 ½ tbsp     chopped fresh dill
2 tbsp         oil
                  Salt & Pepper




Ingredients: for Aioli Dip
1/3 cup        mayonnaise
1 clove         garlic, pressed
½ tbsp         lemon juice
                   Salt & Pepper







INSTRUCTIONS

1. Dice chicken breast in 1/3" thick pieces and place in a bowl.

2. Add the rest of ingredients-- eggs, mayonnaise, flour, mozzarella cheese, dill, salt and pepper to taste. Stir the mixture until well combined.

3. Cover with plastic wrap, chill in the fridge for 10 minutes (or overnight).

4. To fry, heat a non-stick pan over low medium heat, add 2 tbsp of oil. When ready, add the chicken mixture a heaping tablespoon at a time. Slightly flatten out the top with the back of the spoon and saute uncovered 3-4 minutes on the first side, then 3 minutes on the other side, or until golden brown and chicken is fully cooked.

5. To make an Aioli dip, combine all the ingredients in a small bowl and stir together until smooth.

Notes:

- To check if chicken is done, cut the fritter in half, and chicken should be completely white inside. If the chicken patty is browning too fast, adjust your heat down.
